Southwest Quinoa Salad

Our healthy recipe of the week is quinoa, a very popular Supergrain as it is known for its anti-ageing properties. It contains all the 9 essential amino acids that are vital in manufacturing keratin for healthy hair and collagen for supple skin. It also has twice the amount of protein in rice; hence if you need protein boost, this grain is the best choice.

There is a wide variety of healthy recipe for Quinoa to choose from, but for this week, we are going to share how to make Southwestern Quinoa Salad.

Ingredients for this healthy recipe:

  • 1 cup of Quinoa
  • 1 tbsp. butter
  • 2 cups of chicken broth
  • ½ cup of green bell pepper (diced)
  • 1 cup of corn
  • 1 can of drained, black beans (15 ounce)
  • ¼ cup of cilantro (chopped)
  • 1 large diced tomato
  • ½ cup of fresh lemon or lime juice
  • 2 tbsp. vinegar (red wine)
  • 2 tbsp. olive oil
  • 1 tbsp. adobo seasoning
  • ½ cup cheese (feta)
  • Salt and black pepper

Note: all these ingredients are good for 8 servings. You can modify the amount of each according to your preference.

Preparation:

  1. Wash the quinoa well under cold water, and drain it. Over medium heat, melt the butter in a saucepan. Put the quinoa in to cook, stirring it until the water completely evaporates. In about 3 minutes, the quinoa will become lightly toasted. Pour the chicken broth in and bring to a boil. Reduce the heat to low and simmer for 10 minutes or until the quinoa has absorbed the broth. Put the quinoa in the refrigerator for 10 minutes to cool it.
  2. In a large bowl, mix together the remaining ingredients. Carefully stir in the quinoa and season the mixture with salt and pepper. You can also add more lime juice if you want. Put the quinoa salad in the ref for 30 minutes before serving.
