Firstly, Fennel is full of flavor enhancing qualities. You can get many health-giving nutrients from this veggie in the form of fiber, which reduces cholesterol levels as well as removing toxins from your bowels. The fiber is also loaded with anti-oxidants, provides relief for your digestion and reduces inflammation problems.

Next, Celery also reduces inflammation, effects stress relief, alkalizes your body and aids in digestion.
Best of all, avocado, the nearly perfect food is filled with many nutrients vitamins and minerals your body needs. Avocado also keeps your skin healthy and loads the body with beta-carotene, lutein, vitamins B6, C, E, K, selenium, zinc, folate, potassium, glutathione and healthy fats for wellness.

The fresh and healthy fennel soup is a welcome addition to any meal.

And it is easy to prepare!

You will need:

  • One a half cup of raw fennel, approx. One large bulb
  •  3 celery stalks, organic
  •  1 medium to small sized fresh avocado
  • Half a cup of lemon juice
  • a quarter cup of spring or filtered water
  •  Half a teaspoon of unrefined table salt
  • Spring onions about 4 inches in length
  •  2 ice cubes

Directions:

  1. Blend all the ingredients until smooth or it reaches your preferred consistency. Just add flavors to taste or preference, lemon juice, salt or even more water to make a thinner consistency.
  2. Serve cold in small bowls garnished with parsley or fennel sprigs.
