BOURBON-GLAZED PEACHES WITH YOGURT

Our healthy recipe of the week is Bourbon-Glazed Peaches with Yogurt – a yummy and healthy dessert that’s not only appetizing, but also good for the body. If you love eating fruits, then peach must be one of your favourites. Aside from being sweet, delicious and juicy, it is also full of essential vitamins and minerals that are vital for good health.

Healthy Recipe: Benefits of Peaches

  1. It’s good for the eyes. Peaches are a good source of beta-carotene that helps improve the health of your eyes by increasing the blood circulation in all parts of the body.
  2. Peaches are loaded with vitamin C, which is great for the skin.
  3. Need to detoxify to remove toxins that are harmful to your kidneys? Peaches have loads of potassium and fibre content that help lessen kidney-related diseases and the risk of ulcer.
  4. Regular consumption of at least one large peach helps you lose weight. Each piece of this fruit contains only 68 calories with no fat. Also, the fibre content helps in the digestion. So, if you are trying to lose weight, add this on to your diet food.
  5. Peaches are good sources of vitamin and minerals including vitamins A, C, E, and K; and copper, calcium, magnesium, zinc, iron, phosphorus and manganese.
  6. Aside from fibre and potassium, peaches also contain great loads of antioxidant that works as anti-inflammatory.
  7. Peaches are anti-heart disease and anti-cancer fruit. The lutein and lycopene content in peaches help prevent cancer, macular degeneration and heart diseases.

Ingredients of this healthy recipe:

  • 4 ripe peaches (halved and pitted)
  • 5 tbsp. of xylitol (sugar replacement)
  • 3 tbsp. bourbon
  • 1 piece vanilla bean (split lengthwise)
  • 1 cup plain Greek yogurt  (2% reduced-fat)
  • ½ tsp. of vanilla extract
  • 1/8 tsp. of fine sea salt (divided)

Preparation of this healthy recipe:

  1. Remove the seeds from vanilla bean and put it in a medium bowl. Mix the seeds with the bean, yogurt, a dash of salt and ½ tbsp. xylitol. Let it sit for an hour and then remove the bean.
  2. Preheat your oven to 350°.
  3. In a large bowl, mix the remaining xylitol, a dash of salt, vanilla extract and bourbon. Stir everything with a whisk. Gently add and toss peaches in.
  4. Line your baking sheet with a parchment and arrange your peaches on it. Reserve sugar mixture.
  5. Bake peaches for 10 minutes at 350°. Turn each halved peach over and sprinkle cavities with reserved sugar mixture. Bake peaches for additional 10 minutes. Serve them with yogurt and juices.
