Grilled chicken salad with mango and avocado

Nothing beats a yummy and healthy meal altogether! Our healthy recipe of the week may surprise your palate as it brings flavourful dining experience with tangy and savory flavours combined in one bite!

Serve Grilled Chicken Salad with Mango and Avocado for lunch or dinner and let your family or loved ones enjoy this healthy and mouth-watering meal.

Ingredients for this healthy recipe:

  • 8 cups of mixed salad greens
  • 4 ounces of boneless and skinless halve free range chicken-breast
  • 2 tbsp of mango chutney
  • 2 tbsp of fresh lime juice
  • 2 tbsp of olive oil
  • 1 cup of diced peeled mango
  • 1 tbsp of soy sauce (low-sodium)
  • ¾ cup of diced peeled avocado
  • ¾ tsp of peeled and grated fresh ginger
  • Organic Coconut oil for cooking

Note: These ingredients can make 4 servings.

Preparation of this healthy recipe:

  1. Ready the grill.
  2. In a medium-sized bowl, mix soy sauce, juice, oil, ginger and chutney. This makes your oil mixture
  3. Prepare the chicken on a large plate and drizzle 2 tablespoons of coconut oil over it. Reserve the rest as salad dressing. Make sure that each side of the chicken is coated with the oil mixture. Let it stand for 5 minutes.
  4. Grill the chicken for 4 minutes on each side. Make sure you brush oil mixture on the chicken before turning it. Don’t forget to slice the chicken across so that it easily cooks.
  5. On 4 serving plates, arrange the greens, mango, and avocado. Organize the chicken over the greens and drizzle the salad with the remaining dressing. Enjoy this healthy recipe!
