Here’s a perfect recipe that is amazingly tasty and healthy. Introducing the savory Mashed Sweet Potato and Turnip with Sage — a perfect idea for a side dish or a filling low calorie snack. Sweet potatoes and turnips are packed with nutrition and low in fat and calories. Sage is considered by experts as one of the top foods loaded with anti-oxidants. The garlic and the olive oil in the mash provide additional heart protection as well as more appetizing flavors. Still another additional bonus to this nutrient filled dish is that it is easy to prepare and packs low fat energy that will fuel your hectic day!
Ingredients:
In a medium saucepan or cooking pot, combine potatoes, turnips, garlic and 8 fresh sage leaves. Add water and bring to a rolling boil. Cover and simmer for 12-15 minutes or until the vegetables are tender. Drain and keep the vegetables covered in the pan/pot.
In a small skillet over medium heat, add olive oil. Lightly sauté the remaining 12 sage leaves in strips until it crackles. This would take about a minute or two.
Add the Sage and olive oil mix into the vegetables and mash with a fork or a potato masher. Stir in salt and pepper to taste.
Serve and enjoy!
