It is true that eating raw vegetables is healthier because the cooking process takes away at least 50 per cent of the enzymes and nutrients in vegetables. Eating organic raw fruits and vegetables is a key aspect of an anti-cancer diet. However, this claim doesn’t impose that ALL vegetables must be eaten uncooked. That being said, it is suggested that you keep a note of all plant foods, especially vegetables that are best eaten raw and those that need cooking.
The thyroid gland does not make enough thyroid hormone, so anyone affected by this condition will want to avoid foods blocking what little thyroid hormone is being produced! Cooking cruciferous vegetables diminishes substantially the goitrogenic substances (around 2/3). You do not want to cook them too much either as you may loose their nutrients, lightly steamed is a good option. Also, having a whole food complement which uses a process at low temperature would also be a way to complement in healthy food.Here is the list of common crucifers that you will avoid eating raw for the sake of your thyroid gland!
Broccoli, kale, arugula, cabbage, turnip, cauliflower, bok choy, brussels sprouts, collard greens, radish, rutabaga, and watercress.
Light steaming destroys oxalic acid – so make sure to get rid of the cooking water.

So eating raw spinach will not necessarily bring the amount iron you wish because of the oxalic acid?
Yep, that’s right. Cook that spinach first if you are seeking an iron boost and don’t get abuse raw spinach salads!
Eating these greens raws now and then is perfectly fine. Just do not do it every day especially if you do not wish to damage your kidneys.
