Here’s a great recipe idea for the summer, a healthy Bolognese sauce for fettuccini or any preferred pasta. Kids love pasta but they need to eat their vegetables too. Try this recipe with lesser meat and more veggies secretly infused in the flavorful sauce. Second helpings are guaranteed!
Ingredients:
Prepare 2 tsps of coconut oil
2 onions chopped finely
3 carrots chopped finely
Get four celery sticks chopped finely
Add 2 courgettes, cut up into small cubes
And get four cloves of garlic, peeled and chopped finely
Then get a 250g grass fed beef mince
Add 1 heaping teaspoon of tomato puree
And a 400g can of chopped tomatoes
For the pasta, get 400 g of fettuccine, spaghetti or your pasta of choice, best option is a wholemeal version
400g of peas either fresh or frozen will do
Plus a handful of parsley, chopped roughly
Salt and pepper to taste
Preparation: Easy, fast and healthy
Heat the coconut oil (healthier version than olive oil for higher temperatures) in a fairly large frying pan. Then add the onions, carrots, celery, courgettes and garlic. Cook these for approximately 10 minutes or until soft making sure that you don’t burn the garlic. When the mixture begins to stick, add a few dashes of water. Turn the heat up and add the beef mince. Just fry this up for a few minutes making sure you break up the mince with the back of your wooden spoon.
Then you blend in the tomato puree and the chopped tomatoes. Add a can of water and simmer until the sauce thickens, season with salt and pepper as preferred. Then add the peas into the sauce. Blend well and simmer for about 2 minutes.
For the Pasta simply just cook the fettuccine as per the pack directions.
Drain the pasta, place in a serving bowl and then pour in the healthy sauce. Add the aromatic parsley and serve.
