Chicken Salad with Apples and Celery

Our healthy recipe of the week is an absolutely healthy one for people who love salad and chicken altogether. Although, you have to make sure that you’re buying free-range chicken.

Whether you are preparing food for the family or for friends who are coming together for lunch or dinner, this chicken salad recipe with apples and celery is a must-have. Apples almost don’t have sodium, fat or cholesterol. What they contain is mostly vitamin C, a powerful antioxidant; B vitamins like vitamin B-6, riboflavin and thiamin, which are important in red blood cell production and maintenance; dietary fibre for good digestion, phytonutrients that protect the body from the harsh effects of free radicals; and minerals like phosphorus, potassium and calcium.

On the other hand, all the vitamins and minerals that can be obtained from eating celery help a lot in lowering blood pressure, treating joint pains, soothing the nervous system and preventing cancer.

Ingredients for this healthy recipe:

  • 3 stalks of celery (chopped)
  • 2 ½ cups Rotisserie chicken (cut and cubed)
  • 2 tablespoons of mayonnaise (reduced fat with olive oil)
  • ½ cup of non-fat plain Greek Yogurt
  • 1 cup of chopped apple (2 green Granny Smith ones)
  • 2 teaspoons of freshly squeezed lemon juice
  • Salt and pepper to taste

Preparation of this healthy recipe:

  1. Mix the free-range chicken, apples and celery in a bowl.
  2. In a separate bowl, mix the mayonnaise, Greek yogurt, and lemon juice together. Combine everything well.
  3. Mix in the chicken mixture into mayonnaise mixture and stir well. Add salt and pepper to taste.
  4. Serve immediately.
